where can i change or delete this "about us" text on the front page

Hello. Ellie theme allow easily to edit this text. Design -> Layouts, switch to Home Page layout and search for the About html block in Content Top section. Click details -> edit block button.

I am interested in buying a template either the Ellie Theme or the Monnika theme which i like both and i see that both have the same features but i don't like the design and look of the home page. i prefer a home page that is similar to abantecart template.

My question: Can i change the design of the Home page of these templates??

Hello.
Ellie and Monnika have some kind different features hovever both supports abantecart layout manager. Although theme components can provide size and alignment hints, a layout manager has the feature to disable or add blocks in theme.

Do you have a guide? First, when I open the store on my iPhone the homepage scrolling banner images are huge and don't fit to screen. What should the images be set at to work for both desktop and mobile?
Also, how do I increase the font size of the block items in the header such as "Cart" "Customer"?

Hello. 1660px*650px dimensions work best for images with slider. Coz different screen sizes and aspect ratios of devices slider center image to fill image.
To increase the font size of the block items in the header such as "Cart" "Customer" visit Ellie settings page , select Fonts tab and change Body font size.

Thought that was what was needed. Category showing fine, but Brands and Tags are missing. Any ideas on how to fix it?

I would recommend that you add few products with same tag and brand under one category
